The cookware is made of food-grade NICKEL-FREE stainless steel, which is non-toxic, non-allergic, and more energy-efficient than nickel-bearing stainless steel. The pot body and inner base are made of Japanese standard JYH21CT SS (21/0), while the outer base is 430 SS (18/0). Nickel-bearing stainless steel is commonly used for cookware, but nickel is high on the ATSDR list of priority toxins and can leach under regular cooking conditions. Nickel-free stainless steel is not only healthier, but also more heat-conductive, resulting in a noticeable 12-15% energy savings.
